As my husband and I are slowly but surely preparing for a 30 day raw vegan diet /cleanse in a couple of weeks, we are making a steady transition (he’s already eating 90% vegan so I am far behind) from our typical diet and our favorite foods! During that time I will still be posting quick and delicious recipes that I have already “pre- prepared” for you all, but I will also be sharing some of the things that we are currently eating! I stumbled upon these veggie patties as I was “cleansing” my refrigerator and cabinets and needed to make a quick lunch to get my energy up as I was functioning on oxygen at that point! Behold a plethora of raw veggies I typically use for steaming, a couple of cans of chickpeas, a microwavable sweet potato, and these savory veggie patties were born! This is a pretty basic recipe so you can use whatever veggies you would like, of course the taste and consistency will vary, but it will still be a veggie patty none the less and you can tailor it to your specific taste! The bread crumbs are used as a binder and thickener but you can omit them at your discretion. In previous patties I have made I found that overcooked (not burnt) rice makes a good binder as well. Of course, there is always the option to omit the bread or rice all together, the patty will still taste great, HOWEVER, these patties are not thick or heavy, and are still ply-able after cooking, so if you enjoy a firmer veggie patty I would definitely keep the bread crumbs, maybe even add additional to suit your preference!

Of course omitting anything that you are allergic to or do not like may or may not change the end result, but whatever you choose to do, there should be no MAJOR compromise in flavor or quality. Savory Veggie Patties, Makes up to 10 patties
- 1 sweet potato (not a white sweet potatoe)
- 1 can chickpeas
- 1/4 cup green onion
- 1/4 cup parsley
- 4 garlic cloves
- 1 cup onion (or half of an onion)
- 2 cups veggie medley (broccoli, baby bella mushrooms, carrots, yellow bell pepper, red bell pepper)
- 1 cup bread crumbs
- 1/4 cup olive oil
- 1 tsp poulty seasoning
- 1 tbsp Sazonador Total
- 1/2 tsp black pepper
Puree chickpeas in processor, set aside in large bowl. Puree veggie medley in processor, add to chickpeas. Puree onions, parsley, and garlic cloves in processor, add to chickpeas and veggie medley. Add seasonings and breadcrumbs. Add olive oil. Mix. Microwave (or bake, but will add an additional 30-45 min) sweet potato until inside flesh is soft. Add into mixture (small chunks are okay). Form into patties no more than 1 inch thick, “pan fry” in choice of oil until browned and crisp on outside. Carefully transfer from pan to vehicle of choice (plate, burger bun, wrap, salad, etc.) Mixture can be refrigerated 2-3 days and cooked at your leisure!
