Let me be the first to say, I am not a big fan of shrimp, but when it’s part of a great dish I can roll with it! This shrimp dish is a healthy twist on your typical shrimp scampi pasta, with a fiery kick! Of course, if you are not a big fan of spice you can leave out the crushed red pepper and still have yourself a delicious meal nevertheless!
Completely off topic, but can you guys believe I made some AWESOME crab cake bites (and some Italian sausage pasta salad) for a bbq a couple of days ago and completely forgot to take any pictures *tears*! I am now in my last week before I start this 30 day “cleanse” and debating whether I should make them again to share with you guys… guess you all will have to wait and see!
Now back to this dish, it is super quick, takes about 15 minutes, so whip it up for a quick lunch, or a quick dinner, either way, it will be QUICK, and you will be full and satisfied! I found the veggie noodles at Target (the particular brand also has butternut squash and sweet potato noodles, but I wouldn’t recommend those for this dish). The shrimp I purchased from Trader Joes in the frozen food section, and let me just say for some frozen shrimp, they actually cooked beautifully, and tasted fresh! To make this meal completely dairy free use a dairy free butter such as Smart Balance, and omit the parmesan cheese!

Spicy Shrimp Scampi Zoodles, Feeds 2-4
- 20-25 count medium-large shrimp, (frozen or fresh)
- 1 lb of zoodles (spiral cut zucchini; packaged, or spiraled fresh)
- 4 tbsps butter
- 1 tsp crushed red pepper
- 1 tbsp oregano
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 2 tbsps chopped garlic
- 1 lemon
- 1/2 cup chopped parsley
- 1 cup chopped baby bella mushrooms
- 1/2 cup parmesan cheese (optional)
Make sure that your shrimp are thawed and ready to cook. Heat 4 tbsps. of butter in a skillet; once the butter is melted, add your red pepper flakes, oregano, kosher salt, black pepper, and lemon juice squeezed from a whole lemon; You can also use 1/4 cup concentrated lemon juice. Mix ingredients. Add mushroom and garlic, simmer for 2-3 minutes. Add shrimp, simmer 2-3 minutes. Add zoodles, mix all ingredients and cook on low heat for 4-5 m. Turn off heat, stir in parsley and parmesan cheese (optional). Pour entire contents including juices into a serving bowl and enjoy!
